Restaurant & Commercial Kitchen — Cleaning Equipment

Commercial kitchen cleaning applications
Kitchen floor and drain cleaning
Commercial kitchen floors accumulate grease, food debris, cleaning chemical residue and biological contamination throughout service periods. Hot water pressure washing at 70–90°C emulsifies grease contamination significantly more effectively than cold water or mopping alone. Drain channels, floor gullies and grease traps require regular pressure washing to prevent blockage and odour. All kitchen floor wash-down water is trade effluent — it contains grease, detergent and food debris and must discharge to the foul sewer, not surface water drains. Extraction hood and canopy cleaning
Kitchen extraction hoods, canopies, grease filters and ductwork accumulate grease deposits that present a significant fire risk. TR19 guidance (BESA) specifies cleaning frequencies based on usage — high-use commercial kitchens require quarterly ductwork cleaning as a minimum. Hot water pressure washing at high temperature is the most effective method for grease filter and canopy external cleaning. Ductwork interior cleaning typically requires specialist contractors. Bin store and waste area cleaning
Restaurant bin stores, waste compactor areas and external waste collection points accumulate food waste, liquid run-off and biological contamination. Hot water pressure washing at 70–90°C provides effective disinfection of bin store floors and walls. Environmental Permitting applies — bin store wash-down water containing food waste and cleaning chemicals must not reach surface water drains.
External area and delivery yard cleaning
Restaurant external areas — delivery yards, smoking areas, customer entrance areas and car parks — require regular pressure washing for presentation and hygiene standards. Surface cleaner attachments provide even coverage on flat external surfaces. Cold water pressure washing is appropriate for external area cleaning where grease contamination is not the primary concern.
Deep clean and periodic cleaning
Commercial kitchens require periodic deep cleaning — typically overnight or between service periods — covering all equipment surfaces, walls, floors, drains and extraction systems. Contract cleaning companies carrying out restaurant deep cleans require hot water pressure washing capability, industrial wet and dry vacuums and appropriate chemical application equipment. All cleaning chemicals used in food preparation areas require COSHH assessment and must be food-safe rated for use in commercial kitchen environments.

- Food Hygiene Regulations 2006 — cleaning obligations — food businesses are required to maintain premises in a clean condition and in good repair.
