Cleaning Equipment for Food Manufacturing & Food Processing

Food manufacturing and food processing facilities operate under BRC Global Standard, HACCP and Food Standards Agency requirements that mandate hygienic design, wash-down capability and documented cleaning validation. The cleaning standards that apply

BRC Global Standard for Food Safety (Issue 9) — requires documented cleaning schedules, validated cleaning methods, and equipment appropriate to the hygiene zone. High-care and high-risk zones require equipment that can be effectively sanitised between uses.

HACCP (Hazard Analysis and Critical Control Points) — cleaning and disinfection procedures are a prerequisite programme (PRP) under HACCP. Equipment specification is part of the documented PRP, and cleaning validation (ATP swab testing) provides evidence of effectiveness.

Food Standards Agency (FSA) — The Food Hygiene Regulations 2006 require food premises to be kept clean and maintained in good repair and condition. Wash-down of production equipment, floors, walls and drains is a routine legal obligation.


Equipment specification for food manufacturing

Hot water pressure washers — production wash-down

Hot water (60–80°C) is required to effectively break down fats, proteins and biofilms on production equipment, conveyors, tanks and floors. Cold water at pressure moves debris but does not denature protein contamination or achieve the temperature kill step required in high-care environments.

Stainless steel vacuums — production floor and drain recovery

Stainless steel construction is the food-safe specification for vacuum equipment used in production environments. Standard plastic-bodied vacuums cannot be effectively sanitised and may harbour bacteria in joints and cavities.

Hygiene zones — equipment specification by zone

  • Low-risk / ambient — standard wash-down pressure washers and vacuums. BRC basic hygiene zone. Cleaning validation by visual inspection.
  • Low-care — hot water pressure washers, stainless steel vacuums. Regular cleaning schedule with documented records.
  • High-care — hot water pressure washers with sanitiser dosing, stainless steel equipment only, no cross-zone equipment transfer. ATP swab validation.
  • High-risk — highest specification. Dedicated equipment per zone, full sanitisation validation, HACCP critical control point documentation.

Legislation and standards

COSHH Regulations 2002 — cleaning chemicals used in food manufacturing are COSHH-controlled substances. Chemical risk assessment and PPE specification required.

PUWER 1998 — cleaning equipment is work equipment under PUWER. Regular inspection and maintenance records required.

HSE EH40 — flour dust WEL 10 mg/m³ inhalable, 3 mg/m³ respirable. Bakery and milling operations require dust extraction to these limits.
